Antoinette's Cuisine is presently owned by Chef James, who owns and operates several restaurants that serve a diverse set of cuisines -- from Arabic, African and Indian with Ziggurat Cuisine; Thai, Burmese and Vietnamese with Mekong Cuisine; Brazilian, Argentinian and Peruvian with Santiago Cuisine among others. He also has training in Italian, Spanish, Japanese and classical Chinese cuisine.
He is also a self-trained Sommelier, Tequila, Whisky and Single Malt aficionado as well as an amateur bartender. Talents he hopes to introduce to Antoinette's.
Chef James with his brother Rey have also acquired a few other restaurants in Whitehorse. Chef James comes to Antoinette's with tons of experience from working all over the world.
He is an esteemed member of the Centuries old Chaîne des Rôtisseurs and L’Ordre Mondial des Gourmets Dégustateurs. He also has a Masters of Science degree from the prestigious Massachusetts Institute of Technology and has travelled and dined in over 50 countries in 6 continents.
He is a dedicated foodie who confesses to having tried at-least-once everything offered to him from puffer fish, sea slugs, worms, to crickets and scorpions to all forms of mammals, birds and reptiles.
He lives by his 40-inch waistline and says you should definitely trust a fat chef!
